Cornish Garden | A Cocktail Recipe

We discovered this delicious little tipple when we were in St. Ives and have been waiting ever since for an excuse to copy it at home. Luckily the perfect opportunity presented itself when we threw a housewarming party last weekend. The weather was fine so I picked some mint from the garden, cracked out the ice and pretty paper straws and got mixing…

For each 1/2 pint cocktail you will need:

  • 1 shot of gin {I like Bombay Sapphire best… Mostly for the pretty bottle}
  • 1 shot of St-Germaine Elderflower liqueur or Elderflower cordial if you prefer
  • Ginger beer
  • Fresh lime
  • Cucumber
  • Fresh mint leaves

The method is fairly straight forward {I won’t insult your intelligence with steps} but do make sure you give your lime a good squeeze before dropping it in to the glass. The mint and cucumber aren’t essential but they do make lovely finishing touches.

Enjoy!
